When is an automatic tray cleaning system required?

Our automatic tray cleaning system is specifically designed for large bakeries that require the cleaning and automatic oiling of between 2,000 and 10,000 trays per day. 

However, we understand that some customers need to clean and oil as many as 40,000 trays daily, particularly when producing products such as shortbread or rye bread snacks. In such cases, we ensure that you have the necessary number of automated tray cleaning systems installed to meet production demands.

JEROS's tray cleaning system operates automatically with minimal manual intervention. The only manual tasks required are loading and unloading the tray trolley. Depending on the size of the trays, cleaning a full tray trolley, including the automatic oiling process, takes approximately 20 minutes.

The system features a visual indicator that signals when the tray trolley is empty and halts the process when the receiving trolley is full. Once the full trolley is removed, an empty one from the feeding section is automatically positioned to continue the cycle.

Designed to be enclosed and insulated, the system also reduces operational noise, ensuring a safe working environment. Even in areas with high concentrations of flour dust, the system continues to function without issue.

How to Clean Trays Without Water or Chemicals:

  • The trays are loaded into the machine, where the pre-scraper system removes any loose debris.
  • The pressure applied by the rollers ensures thorough cleaning and helps maintain the flatness of the tray surface.
  • The driving roller ensures the trays move smoothly through the machine, while also breaking down any sugar residues, making it easier to remove them.
  • High-speed steel or nylon brushes then eliminate any burnt-on deposits, directing them into a waste collection container. To maintain optimal cleaning performance, this container should be emptied regularly.
  • The driving roller moves the trays through the final cleaning brushes, providing an additional level of cleaning and ensuring that perforated trays have their holes cleared.
  • A unique finishing brush removes any fine deposits, which helps to prolong the life of the oil applied to the trays.
  • The driving roller then guides the trays through the automatic oiling system, after which they are automatically placed into the tray wagon.
  • Trays are cleaned with the baking side facing up, enabling them to be immediately reused without the need for turning.
  • Optional cleaning brushes are available in steel, nylon, and stainless steel.

Replaceable side brushes

The steel/nylon brushes are fitted with side brushes that can be easily replaced in just a few minutes, as these tend to wear more quickly than the other brushes due to contact with the edges of the trays.

Rather than replacing the entire brush, simply replacing the side brush is sufficient to maintain effective cleaning. Based on experience, our brushes have a lifespan of 6-8 years when cleaning 500 trays per day.

Cleaning of the automatic tray cleaner itself 

As the automatic tray cleaning system requires regular cleaning, JEROS has designed features that make this task both easier and quicker. Daily cleaning takes less than 15 minutes.

To clean, simply open the top hood and remove the cover plates. The cleaning residues can then be brushed out, falling into the dirt-collecting compartment, which can be easily emptied.

Twice a week, the interior of the tray cleaning system undergoes a thorough wet cleaning using a steam cleaner. Certain brushes can also be removed for separate cleaning in a utensil washer, without the need for any tools.
