The National Culinary Teams of Denmark consists of six teams: the National Culinary Team, the National Junior Culinary Team, the National Catering Team, the National Waiter Team, the National Pastry Team, and the National Bakery Team.

The teams, along with the equipment used for their training, are based at Cookery at JØNI in the heart of Funen.
JØNI generously sponsors all six teams, providing a 1,500 m² training facility. Cookery has previously served as a showroom and knowledge centre, hosting events and conferences. Today, the National Culinary Teams of Denmark use Cookery to train for prestigious competitions, including the World Cup and the Olympics.

"We've equipped Cookery's 1,500 m² training kitchens with everything our national teams need for both sweet and savoury cooking. And this is where JEROS plays a key role.
For our national team members to perform at their best, it’s essential that the equipment is easy to use and highly efficient – and JEROS's commercial dishwashers are no exception. Specifically, the large commercial dishwashers and warewashers have made our operators' work much easier and more ergonomic:
- The lids of the dishwashers automatically open and lift after washing, meaning our operators don’t have to exert any effort to open them manually.
- The three open sides of the dishwashers allow operators to easily load dirty dishes onto trays and remove them once cleaned.
With our commercial dishwashers running between 50 and 100 times during training, our operators avoid the strain of heavy lifting thanks to the thoughtful placement near the loading tables," says Morten Juul Andersen.

"When our National Culinary Team and Junior Culinary Team compete, each team consists of six members, and one of them is always assigned to handle the dishes.
While the chefs often receive the spotlight, the busboy and commercial dishwasher are just as essential for success. The busboy's sole responsibility is to ensure dishes are cleaned and organised, allowing the chefs to stay focused and avoid bottlenecks during competition or training. This is exactly how it works during our training sessions at Cookery."
"Many people don’t realise it, but our commercial dishwasher is just as crucial as any other piece of equipment we use during training," Morten Juul Andersen reflects:
"The dishwashing station creates more space for the national team members, allowing them to quickly clean and reuse equipment. The entire cleaning process has become much simpler, and we’re pleasantly surprised by how much it impacts the efficiency of all the other kitchen operations."
At JEROS, we go beyond just making kitchen equipment look clean after washing. At Cookery, we’ve installed dishwashers that log washing results via data tracking.
This allows the National Culinary Teams of Denmark to document that the dishes are washed correctly: at 52°C with chemicals, followed by an 85°C rinse to disinfect with clean hot water.

At the Danish Gastronomic Union, our unwavering focus on high-end results sets us apart. We provide a training platform that ensures top-tier performance across all national teams, creating value for them every step of the way.
Take the chefs, for example. We train them to achieve the highest accolades, from gold medals at the Olympics and World Championships to Michelin stars. We typically start with students who are passionate about competing, from events like DM in Skills, EuroSkills, and WorldSkills. The next step for those who excel is often the Junior National Team, with the ultimate goal of reaching Michelin recognition.

Many of our chefs, such as Rasmus Munk from Alchemist, Rasmus Kofoed from Restaurant Geranium, Michael Nørtoft, and Kenneth Toft-Hansen, have progressed from the Junior National Culinary Team to the National Culinary Team, and ultimately to Michelin stars. They remain with us for up to 10 years, fostering a community that pushes each other to excel.
They are among the very best in their field, driven by a passion for perfection. Our role is simply to provide the ideal environment and facilities to help them achieve their best results," concludes Morten Juul Andersen with a smile.

To boost gastro-tourism, representatives from our National Culinary Team and Junior National Culinary Team accompany the Royal Family and Danish government members on official state visits. These visits are not just a chance for our chefs to shine, but also for the Danish Gastronomic Union Foundation to showcase its culinary excellence.
During these state events, we prepare the gala dinners for Denmark and the Royal Family. We take pride in featuring high-quality ingredients from participating food industry partners, such as Arla and Danish Crown, whose products are prominently highlighted on our menu.
This collaboration underscores our commitment to branding — promoting not only Denmark’s culinary heritage but also the excellence of our partners, chefs, and the Royal Family.
