Producing large quantities of bakery products daily requires a significant number of baking trays and perforated trays – all of which must be spotless.

After all, nothing detracts more from the quality of a product than a dirty bottom on bakery items.

"As well as using the finest raw materials and relying on the expertise of our skilled bakers, clean baking trays have always been fundamental to maintaining high quality," says Master Baker Frank Görtz from Bäcker Görtz, adding:

"We came across JEROS by chance during a visit to Heitzmann Bakery, where they had installed one of their automatic tray cleaning systems, the JEROS 9020, with automatic tray insertion. We immediately realised this was the solution to our challenges.

Before we discovered JEROS, we needed two full-time employees to fill and empty our old tray cleaner, processing 7,000 trays daily – all manually!

Now, everything is automated! And handling the clean trays is much easier since the trolleys can be moved directly to the production area, converted into a work surface in no time, and loaded with minimal effort.

This tray cleaner cleans one tray at a time, after which it is oiled and ready for use.

Our automated tray cleaning system can clean and oil 150 baking trays in just 15 minutes!

Before JEROS's automatic tray cleaning system, larger bakeries often required up to three employees to operate smaller tray cleaners. Their task was to ensure that trays were constantly loaded into the machine and removed once cleaned.

With today's demand for greater efficiency, automation is essential to maintaining a smooth production flow. JEROS's automated tray cleaning system processes the trays automatically and notifies you when they are ready for use.

When is an automated tray cleaning system needed?

Our automated tray cleaning system is designed for large bakeries that need to clean and oil between 2,000 and 10,000 trays daily.

For customers needing to clean and oil up to 40,000 trays daily – such as those producing shortbread, rye bread snacks, and similar products – we can adjust the number of automated tray cleaning systems to match your production requirements.

In these cases, typically only one employee is needed to move the trolley with dirty trays into the tray cleaner and to collect the trolley with the cleaned trays once the process is complete.

Optimal Cleaning of Perforated Baking Trays

Perforated trays are commonly used in bakeries for baking various types of bread, allowing heat to circulate freely. However, the holes can become blocked during the baking process, restricting airflow and impairing heat distribution in the oven.

To address this, we have developed the MODEL 9015 tray cleaner, specifically designed to clean both the smooth surface and all the holes of perforated trays.

The cleaning brushes thoroughly clean both sides of the tray, while the final brush ensures that any accumulated dirt is pushed out of the holes, preventing blockages that could disrupt energy and heat flow during baking.

After cleaning, the tray is coated with a thin layer of oil, which functions like baking paper.

If so, you need a thorough cleaning of hoses

While tray cleaners are often the focus when working with bakeries and pastry shops, these industries also require thorough cleaning of the entire process line.

Fortunately, our industrial dishwashers are a valuable asset, especially in larger cake and confectionery productions where ingredients like chocolate pass through removable hoses, creating a significant need for thorough cleaning.

Chocolate has a tendency to form a coating inside the hoses, particularly when the industrial dishwasher is left on standby overnight.

To address this, we have developed a system that internally rinses and washes the hoses, ensuring optimal hygiene and eliminating the need for the manual cleaning typically required when hoses are flushed by hand.

At JEROS, we have designed a solution where the hoses are arranged in a spiral inside our industrial dishwashers, preventing any contamination.

This specially developed hose cleaning solution is also used for producing items like icing, yogurt, tuna salad, and chicken salad.

And it always delivers the shortest possible wash time with minimal water and detergent consumption.
